2011 - Solar Roast Food is a Big Hit With Customers

When Lisa Becker closed the door to her TeaTree cafe in December, she had already found a new door to open: the kitchen door to Solar Roast Coffee! Bringing her considerable talent and experience with her, she joined forces with brothers Michael and David Hartkop to revolutionize the Solar Roast dining experience.
"We've always made it our business to serve the best coffee in town..." Recalled owner David, "But our food had always been kind of an afterthought."
Afterthought no-more! Their new full menu offers a spread of new sandwiches and a full variety of breakfast pastries. They also serve salads, breakfast burritos, and provide vegetarian and gluten-free options. The new lineup of gourmet bagel sandwiches are a home-grown experience to savor: Customers can treat themselves to the "Lox of Love," which brings seasoned lox and cucumber ribbons together with house-made artichoke cream cheese. Another new favorite is the "P-Town 4evah," which brings the authentic flavors of Pueblo to life with turkey and roast beef on a toasted Jalapeno bagel, served with Pueblo green-chili cream cheese. Complete with new professionally produced printed menus, the coffee shop has officially graduated to a full sit-down cafe restaurant.
"Winter is usually the quietest time in the retail year, but we've actually had some of our record-best days, and it's only February!" said Michael from behind a gleaming Astra espresso machine.
Lisa was all smiles in the kitchen when she explained, "It was a risk to try something new, but this way we can all do what we do best -Food and Coffee!"
Solar Roast Coffee, in downtown Pueblo Colorado, has been roasting and serving coffee since opening in 2007. This is the first time, however, that they have combined forces with another local business in such an organic way. The new-found partners are proving that gourmet dining and excellent coffee are a win-win combination.
